Exploring the Sherry Wine
Fino, Manzanilla, Amontillado, Palo Cortado, Oloroso, Cream, PX, and Moscatel: few wine regions offer a diversity of styles as astonishing as Jerez. In this course, led by Luís Gradíssimo of the Enóphilo School, we will explore one of the world’s most unique wine regions, examining its terroir and key grape varieties, and understanding the production and aging methods that define the identity of its wines. From the mysterious *flor* veil to the *Criaderas y Solera* system, we will grasp the differences between biological and oxidative aging and discover how they give rise to profoundly distinct wines. Join us on a journey through the world of Jerez—accompanied by a guided tasting of its main styles—to learn how to distinguish and serve them, and to discover their extraordinary versatility at the table.

Notes:
– The wine courses are conducted by Escola Enóphilo, and the entire program is their sole responsibility.
– The ticket includes instruction and a wine tasting.
– Time Out Academy gift vouchers cannot be used to purchase tickets for Enóphilo courses.
– Presenting a digital or printed ticket upon entry to the workshop is mandatory; the ticket will be validated.
– Each ticket is valid for one person aged 18 or older.
– There is no reserved seating. Participant seating arrangements will be indicated upon entry to the workshop.
– Workshops begin promptly at the scheduled time; late entry is not permitted.
– The primary language of the workshop is Portuguese.
– Ticket exchanges, returns, or refunds are not available.
